Which European countries would you say are the best to overland in?

I would agree with the above mate. While you are there it may also be a good idea to go through Albania and Romania! There are some great trails over there
 
Yep, the three mentioned above I think are the best. From some research I have done in the past most of them seem to have strict rules when it comes to driving off road
