Squeaking noise when the wheels are turning after playing in the mud. What could it be?

The is probably dirt between your disc and the steel cover behind it. Drive it for a bit or give it a good jet wash and it will stop making noise
 
Dirt between the disk dust cover and the rotor mate. or dirt in the pads. Both will clean up after a few miles
