Is there a way you can seal/keep mud and water out of drum brakes?
I love driving around in the mud but don’t feel like getting my brakes rebuilt every bloody time.

Not really mate, the only thing you can do is keep them clean. So whenever you play in the mud open them up and give them a good clean
