Question about bush cooking

I admit, I really enjoy watching out in the bush adventure videos. Now one thing I notice on these is that many times when people are handling raw meats, for example pork... you don't see them washing their hands after handling! How in the world are they not getting sick from the raw meat?

Something I read a while ago told me the pork today is not the same as yesterday. Something about what they feed them or breeding. Anyway from what it said, you only had to worry about it if you kill something wild.
Look into it. Some of it's quite interesting.

After I prepare my food, I wash my hands mostly because I don't like the slimy feeling. I have on occasion just wiped them off after.
