Emergency Bug out kit

I'm not trying to go all prepper, but have heard some compelling reasons to have a bug out of dodge kit handy. I'm just starting on my Amazon cart right now, I have what I believe will be 2 weeks of MRE and Mountain House meals. Not sure what to do with the water, because doesn't that go bad? What else should go in a kit like this?

I drink a bit of water. I buy it in gallon jugs. I keep about 20 gallons in my kitchen. Every week I buy more to replace what I used and rotate them by age. Figure about 20 odd gallons in the house ant anll times. Each of my vehicles have two gallons of water, a basic cook kit with a jet boil and five mountain house. I also have a backpack water filter in both vehicles.

I occasionally just throw some sleeping gear and maybe a few drinks then just take off for the weekend last minute. If you want to see if your missing anything, do that a few times Just replace what you eat.

Because you only mentioned food/water I didn’t cover anything else.
